Mint Chocolate Cookie Greek Yogurt Ninja Creami Ice Cream

I’ve been having a lot of fun experimenting with my Ninja Creami (paid link) lately, and this one turned out especially good.

One thing I’ve discovered along the way is that the protein powder really matters when you’re using it in a recipe.

I’ve used another protein powder for quite a while, and I still love it for my protein shakes. But when I started using it in frozen recipes, I noticed that it left a little bit of an aftertaste.

Then I tried Clean Simple Eats.

What I really like about it is that I don’t get that protein-powder aftertaste in my Creami recipes. It blends into the ice cream instead of making the ice cream taste like protein powder.

And each packet gives me 20 grams of protein, which makes this a pretty satisfying little dessert.

The Base

This is the base that I use for my yogurt-based ice cream recipes.

Ingredients

  • 1 cup Fage 0% Greek yogurt, or yogurt of your choice
  • ½ cup Fairlife Fat Free milk
  • ½ teaspoon salt
  • 1 teaspoon Vanilla Extract (paid link)
  • 2 teaspoons Monk Fruit Sweetener (paid link)

The Add-Ins

Make the Base

Add all of the base ingredients and the add-ins to the Ninja Creami Container (paid link).

Using an Immersion Blender (paid link), blend everything together until completely smooth and creamy.

I like using the immersion blender here because it gives the mixture a really smooth, creamy consistency before it even goes into the freezer.

Place the lid on the pint and freeze it level for 24 hours.

When You're Ready to Make Your Ice Cream

Remove the pint from the freezer and run it through the Ice Cream setting.

If the mixture looks a little crumbly after the first spin, don’t worry. That’s normal.

Here’s a little Creami trick I learned from one of my student employees:

Take a butter knife and gently move the frozen mixture away from the inside wall of the container.

Then add your chosen mix-ins and run it through Mix-In one more time.

I’ve found that this gives me a thicker texture that is much closer to actual ice cream.

Choose Your Mix-Ins

The obvious choice is chocolate sandwich cookies, but there are some other combinations that would be really good with this mint chocolate base.

  • Mint Oreo Cookies (paid link)— the classic Mint Chocolate Cookie
  • Dark Chocolate Nibs (paid link) — for a deeper chocolate flavor
  • Mini chocolate chips — easy and gives you little bites of chocolate throughout
  • Double Chocolate Brownie (paid link) pieces — if you want to make it extra decadent
  • Oreo Small Cookie Crumbs (paid link)— a little more chocolate without making it overly sweet
  • Sugar-free chocolate chips + crushed cookies — for a double-chocolate-cookie combination
  • After Eight Mints (paid link) — for an extra minty chocolate flavor

You can also skip the mix-ins completely. The base itself makes a really good mint chocolate protein ice cream.

A Little Creami Lesson

One of the things I’ve come to enjoy about making these is that I’m learning as I go.

Sometimes it’s an ingredient that makes the difference.

Sometimes it’s the protein powder.

And sometimes it’s simply learning how to use the machine a little differently.

That’s part of the fun.

You don’t have to make it exactly the way I do. Start with the base, choose your favorite mix-in, and see what you like.
